Kolhapuri Egg Curry is a spicy egg curry made by cooking boiled eggs in a flavourful onion-coconut beased gravy. It is best served with bhakri and onions on the side.

Ingredients for the recipe

For Frying Eggs

  • 1 tbsp Vegetable Oil
  • ¼ tsp Unifolks Turmeric Powder
  • ¼ tsp Unifolks Red Chilli Powder
  • 6 Boiled Eggs
  •  

For Paste

  • 1 cup Dry Coconut (Grated)
  • 6-8 Cloves
  • 1 inch Cinnamon
  • 3-4 Clove
  • 1 Black Cardamom
  • 4-5 Peppercorns
  • 1 tsp Cumin Seeds
  • 1 tbsp Coriander Seeds
  • 1 tbsp Sesame Seeds
  • ½ cup Onion (Chopped)
  • 2 Green Chilli (Chopped)
  • 2 tbsp Fresh Coriander
  •  

For Gravy

  • 4 tbsp Vegetable Oil
  • 1 tsp Cumin Seeds
  • 2 tsp Unifolks Kashmiri Chilli Powder
  • 2 tsp Unifolks Egg Curry Masala
  • ½ tsp Unifolks Turmeric Powder
  • ½ tsp Unifolks Garam Masala
  • 4 tsp Besan
  • 1 Boiled Egg (Grated)
  • Salt to taste

Preparation Method

For Frying Eggs

Step 1

In a pan, heat vegetable oil.

Step 2

Make slits in boiled eggs.

Step 3

Add Unifolks Turmeric Powder, UnifolksRed Chilli Powder and boiled eggs in the pan.

Step 4

Fry for 3 to 4 minutes, and transfer to a plate.

For Paste

Step 1

Roast dry coconut, garlic, cinnamon, cloves, cardamom, peppercorns, cumin seeds, coriander seeds, sesame seeds and onion until slightly browned.

Step 2

Turn off the heat and allow the mixture to cool.

Step 3

Mix the ingredients in a blender with the green chilli and fresh coriander to create a paste-like consistency.

Step 4

While blending the paste, add a little water.

For Gravy

Step 1

In a pan, heat the oil.

Step 2

Once the oil is hot, add the cumin seeds and wait as they quickly crackle.

Step 3

On medium-low heat, add the ground masala and stir-fry for 3–4 minutes.

Step 4

Add Unifolks Red Chilli Powder, Unifolks Egg Curry Masala, UnifolksTurmeric Powder, Unifolks Garam Masala and besan and fry for another 3-4 mins.

Step 5

In case the masala is burning, add a little water.

Step 6

Add grated boiled egg, salt to taste and 2 cups of water and bring the curry to a boil.

Step 7

Add the fried eggs and cook for 5-6 mins.

Step 8

Serve hot with rice or roti.
